Superfood:Kale What's the deal?

It feels like everywhere we turn we're are faced with a new "superfood". Given this title for their calorie amount and high nutrient levels. One I've been hearing a lot about lately is Kale.

To be honest I had never really heard or seen kale before but this green leafey vetegable is from the same family as cabbage. It's high is vitamin A, vitamin C and calcium. Kale is high in carotene, lutein and zeaxanthin, which have been proven to prevent macular degeneration and one cup of Kale has over 90g of fibre. It helps regulate liver enzymes that assist in the clearing of toxins. It's also linked to helping prevents cancer. This list could go on, there are so many more benefits packed into this little lettuce lookalike you just wouldn't believe it.

You can find kale in the produce section in most supermarkets. I couldn't find it at my local woolworths but found it at my local fruit and veggie shop. You just need to know what you're looking for you and you'll find it!

So what now? You can add Kale in smoothies, boil it, add it to stir frys and bake it.One I'm really looking forward to try is an alternative to potato chips....kale chips! It's easy as and only calls for a pitch of salt, a drizzle of olive oil and some time in the oven. People claim that they taste amazing and are freakishly addictive! Sounds delicious to me! As soon as I try I'll post the recipe up and let you know the verdict!
