Clean Chocolate Coconut Cookies

You'll eventually get to know that I'm a huge fan of cakes, cookies and dessert in general! As we all know however cakes are full of sugar, white flours, butter, oil and a hell fo a lot of bad ingredients. I've searched high and low for cake and cookie recipes to satisfy my sweet cravings but still remain healthy. I have tweaked it a little to make it a tad healthier. Also, Australia lacks a lot of the ingredients that the US gets so I try to look for alternatives that we can find in our local grocery store. Ingredients:
  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup coconut flour
  • 4 teaspoons of stevia/natvia
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4-1/2 cup dark chocolate chips
  • 2 egg whites
  • 2 tbs. coconut oil
  • 1/3 water
Steps:
  1. Preheat your oven to 175 degrees
  2. Line a flat baking tray
  3. In a bowl combine your dry ingredients (coconut, coconut flour, stevia/natvia, baking powder and baking soda)
  4. Next add in your eggs, egg whites, coconut oil, and water and mix until blended
  5. Lastly mix in the chocolate chips. Make sure they are finely chopped so they spread throughout the cookies, you can add more chocolate if you prefer your cookies chocolatier
  6. Take a small chunk of mix, roll into small balls and push into flat cookie shapes on the tray.
  7. Bake for 12-15 minutes until done! Enjoy!
